Slow-Cooker Greek Penne

Indulge in a creamy Mediterranean pasta dish with savory ground beef and tender spinach, simmered to perfection.
Ingredients:
  • 2 2/3 cups uncooked penne pasta (8 oz)
  • 1 lb ground beef round
  • 1 large onion, chopped (1 cup)
  • 1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
  • 3/4 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 4 1/2 cups roasted garlic tomato pasta sauce (from two 1-lb 8-oz jars)
  • 1 tablespoon sugar
  • 2 cups crumbled feta cheese (8 oz)
  • 1 cup shredded mozzarella cheese (4 oz)
  • Thinly sliced fresh basil leaves, if desired
Instructions:
  • Prepare the slow cooker by spraying the bottom and sides with cooking spray. Line the sides with foil and spray the foil with cooking spray. Cook the pasta according to package directions for the minimum suggested time, then drain.
  • In a large skillet, sauté beef and onion over medium heat for 8 to 10 minutes until beef is fully cooked; remember to stir occasionally. After draining, add spinach, oregano, salt, and pepper. In a separate bowl, combine pasta sauce with sugar.
  • First, coat the bottom of the slow cooker with 1 1/2 cups of the pasta sauce. Next, create layers by alternating half of the pasta, half of the beef mixture, and 1 cup of feta cheese. Repeat the layers. Pour the remaining 1 1/2 cups of pasta sauce over the top. Finish by sprinkling mozzarella cheese on top.
  • Cover and simmer gently over a Low heat for 3 hours until bubbling. Allow it to rest for 10 minutes before serving, and top with fresh basil before enjoying.
