Tender baby back ribs marinated in Greek flavors of olive oil, lemon, oregano, and garlic.
Ingredients:
  • 3 pounds baby back ribs, membranes removed
  • 0.5 cup finely chopped onion
  • 0.25 cup olive oil
  • 0.25 cup fresh lemon juice
  • 0.25 cup chopped fresh oregano
  • 1 tablespoon liquid honey
  • 5 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions:
  • Place baby back ribs in a large resealable plastic bag along with onion, olive oil, lemon juice, oregano, honey, garlic, salt, and pepper. Seal the bag and massage the ingredients together until the ribs are evenly coated.
  • Chill in the fridge, turning occasionally, for 4 to 8 hours.
  • Preheat the oven to 400 degrees F (200 degrees C) and line a baking sheet with aluminum foil, then grease it with cooking spray.
  • Lay out the ribs on the baking sheet, making sure to leave some room between each one.
  • Bake in a preheated oven until golden brown, approximately 10 minutes. Lower oven temperature to 300°F (150°C) and bake until the ribs are tender, about 1 hour.
