Mediterranean sheet pan salmon with feta and olives for a burst of Greek flavors.
Ingredients:
  • 1.5 pounds salmon fillet
  • 0.5 teaspoon garlic salt
  • 1 pound fresh asparagus, trimmed
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons Greek seasoning
  • 0.25 cup crumbled feta cheese
  • 2 tablespoons pitted and chopped Kalamata olives
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Cut the salmon into 4 even pieces and arrange them in the center of the prepared sheet pan. Sprinkle the salmon with garlic salt and surround it with the asparagus.
  • In a small bowl, mix olive oil, lemon juice, and Greek seasoning. In another bowl, combine feta cheese and olives.
  • Coat salmon with half of the oil mixture and pour the rest over the asparagus.
  • Roast the salmon in the preheated oven until it easily flakes with a fork, about 12 to 15 minutes, adjusting for thickness. Then, add the feta mixture over the salmon in the final 5 minutes of cooking.
