Quick and easy Greek chicken, potatoes, and peppers cooked on one sheet pan in just 30 minutes.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 1.5 pounds yellow potatoes, cubed
  • 2 medium red bell peppers, seeded and chopped
  • 0.5 cup coarsely chopped red onion
  • 2 tablespoons olive oil
  • 2 medium lemons, cut into wedges
  • 1 tablespoon dried oregano
  • freshly cracked salt and pepper to taste
  • 0.5 cup pitted Kalamata olives
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Combine chicken, potatoes, bell peppers, onion, oil, and garlic in a large bowl. Spread the mixture onto a large sheet pan in a single layer. Squeeze lemon wedges over the top and scatter them on the pan. Sprinkle oregano, salt, and pepper. Finish by adding Kalamata olives.
  • Roast in the oven until potatoes are tender when pierced with a fork and chicken breasts are cooked through, about 25 minutes. Ensure chicken reaches an internal temperature of at least 165°F (74°C) using an instant-read thermometer.
