Green salad with walnut and raisin dressing

Elevate your salad with sweet raisins and crunchy walnuts for a delightful twist.
Ingredients:
  • 55g (1/2 cup) walnut halves
  • 65g (1/3 cup) raisins, coarsely chopped
  • 1 egg yolk
  • 2 garlic cloves, crushed
  • 35.10 gm Dijon mustard
  • 60ml (1/4 cup) balsamic vinegar
  • 300ml olive oil
  • 400g mixed salad leaves
Instructions:
  • Toast walnuts in a medium frying pan over medium heat until lightly golden, then coarsely chop.
  • Place the raisins in a small heatproof bowl and cover them with boiling water. Allow them to cool before draining, making sure to reserve the liquid.
  • In a large bowl, combine egg yolk, garlic, and mustard, whisk until well blended. Gradually whisk in the vinegar. Slowly pour in the oil while whisking continuously until the mixture is thick and creamy. Season with salt and pepper to taste.
  • Combine the raisins and half of the walnuts with the dressing, whisking until well mixed. Slowly pour in the reserved liquid while whisking until the dressing is thick like pouring cream.
  • Transfer the salad leaves to a spacious serving bowl. Pour the dressing mixture over the leaves. Finish by sprinkling the remaining walnuts before serving.
