Creamy Greek yogurt stroganoff: low-fat, one-pan chicken and mushrooms cooked on the stovetop.
Ingredients:
  • 2 tablespoons butter, or as needed
  • 1.5 cups sliced fresh mushrooms
  • 1 onion, chopped
  • 2 cups chicken stock, divided
  • 2 tablespoons all-purpose flour, or as needed
  • 2 cups plain Greek yogurt
  • 4 ounces reduced-fat cream cheese, cut into pieces
  • 0.5 pound shredded cooked chicken, or more to taste
Instructions:
  • Heat butter in a skillet until sizzling. Cook mushrooms and onions until tender and golden, around 5 minutes. Add 1/2 cup stock, bring to a boil, and deglaze by scraping up the flavorful bits with a wooden spoon.
  • Stir in flour into the mushroom mixture, cooking until light golden brown for about 30 seconds. Add the remaining 1 1/2 cups of stock and simmer until the sauce thickens, stirring occasionally for about 5 minutes.
  • Combine the yogurt into the sauce; mix in the cream cheese until melted and sauce thickens, around 2 minutes. Add the chicken and cook until heated through, about 5 minutes.
