Tangy Greek lemon potatoes, roasted to perfection, versatile side dish.
Ingredients:
  • 8 medium potatoes, peeled and quartered
  • 0.25 cup olive oil
  • 0.25 cup lemon juice
  • 2 cloves garlic, minced
  • 1.5 teaspoons seasoned salt
  • 1 teaspoon chicken soup base
  • 1 teaspoon Greek seasoning
Instructions:
  • Heat your oven to 450°F (230°C).
  • Distribute the potatoes evenly in a large casserole dish.
  • Combine olive oil, lemon juice, garlic, seasoned salt, chicken soup base, and Greek seasoning in a medium bowl, then drizzle over potatoes and mix well to ensure even coating.
  • Roast uncovered in a preheated oven until tender, around 30 minutes. Then, lower the oven temperature to 350°F (175°C) and bake until fork-tender, about 15 minutes more.
