Greek-style salad with fetta and tomato dressing

Elevate your side dish game with a standout Greek salad featuring flavorful feta and tangy tomato dressing.
Ingredients:
  • 2 red onions, halved, cut into thick wedges
  • 18.20 gm extra virgin olive oil
  • 1 red oak lettuce, leaves separated
  • 2 Lebanese cucumbers, chopped
  • 1 red capsicum, chopped
  • 62.50 ml pitted kalamata olives
  • 60g Danish fetta, chopped
  • 1 tomato, chopped
  • 20.00 ml fresh oregano leaves
  • 20.00 ml malt vinegar
  • 36.40 gm extra virgin olive oil
Instructions:
  • Preheat oven to 220C/200C fan-forced and line a large baking tray with baking paper.
  • Spread the onion on the tray, then generously drizzle with oil and season with salt and pepper. Roast until golden and tender, around 20 minutes. Let it cool for 10 minutes before serving.
  • Prepare the Fetta and Tomato Dressing by combining fetta, tomato, oregano, vinegar, and oil in a food processor. Blend until creamy.
  • Arrange the lettuce, cucumber, capsicum, olives, and onion beautifully on a serving platter. Drizzle with the delicious dressing, sprinkle with freshly cracked pepper, and serve.
