Green Banana Pakoras

Crispy spiced banana fritters served with chutney, a traditional Maharashtrian delight.
Ingredients:
  • 2 medium green bananas, peeled and cut into thin slices
  • 2.5 cups chickpea flour
  • 1 teaspoon rice flour
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon chili powder
  • 1 pinch baking soda
  • 0.5 cup water, or as needed
  • 0.5 cup oil for frying, or as needed
Instructions:
  • Peel the bananas and slice them thinly. Submerge the slices in a bowl of salted water for 5 to 10 minutes.
  • Combine chickpea flour, rice flour, turmeric, chili powder, salt, and baking soda in a bowl. Gradually add water until the batter reaches a smooth consistency - not too thick or too runny. Stir continuously to ensure a lump-free batter.
  • Warm a generous amount of oil in a frying pan over medium-high heat.
  • After draining banana slices, gently pat them dry with paper towels. Then, dip them in the batter and carefully place them in the hot oil. Fry in batches until both sides are a beautiful golden brown, which should take about 2 to 3 minutes per side.
