Transylvanian green bean soup with bacon and sour cream.
Ingredients:
  • 2 pounds fresh green beans
  • 1 sprig fresh parsley
  • 1 pinch salt
  • 2 slices bacon
  • 3 tablespoons all-purpose flour
  • 1 cup sour cream
  • 3 tablespoons vinegar
Instructions:
  • In a large pot over medium heat, combine green beans, garlic, parsley, salt, and enough water to cover. Cook until beans are tender.
  • Crisp up the bacon, then set it aside. Cook the onion and flour in the bacon grease until smooth and brown. Gradually add water from the beans, stirring constantly to avoid lumps.
  • Thicken the mixture slightly, then combine it with the bean soup and bring to a boil. Stir in crispy bacon, sour cream, and vinegar.
