Wholesome potato and green bean soup with a tangy-sweet twist - perfect for a speedy weeknight dinner.
Ingredients:
  • 3 potatoes, cut into cubes, or more to taste
  • 2 cups 1-inch cut green beans
  • water to cover
  • salt and ground black pepper to taste
  • 5 slices bacon, chopped
  • 2 tablespoons all-purpose flour
  • 0.25 cup apple cider vinegar, or to taste
  • 2 tablespoons white sugar, or to taste
Instructions:
  • In a large pot, combine the potatoes and green beans. Add enough water to just cover them, then season with salt and pepper. Bring to a boil, then reduce heat to medium-low and simmer until potatoes are tender, approximately 20 minutes.
  • In a large skillet, cook bacon over medium-high heat until evenly browned, about 10 minutes. Stir in flour to create a paste, about 2 to 3 minutes. Add bacon mixture to potato mixture, bring to a boil, and cook until thickened, about 5 to 10 minutes. Mix in vinegar and sugar.
