Modern Asian-inspired cherry glazed pork.
Ingredients:
  • 60ml (1/4 cup) port
  • 55g (1/4 cup) caster sugar
  • 60ml (1/4 cup) red wine vinegar
  • 2 whole star anise
  • 300g pkt frozen cherries
  • 125ml (1/2 cup) Plum Sauce
  • 10.60 gm soy sauce
  • 18.20 gm olive oil
  • 4 (about 850g) pork loin cutlets
  • Steamed Asian greens, to serve
Instructions:
  • 1. Preheat oven to 200ºC. 2. Combine port, sugar, vinegar, and star anise in a saucepan over medium heat, stirring until sugar dissolves. 3. Bring the mixture to a boil, then simmer for 1 minute. 4. Add cherries and simmer for an additional minute. 5. Strain the mixture into a bowl, saving 125ml (1/2 cup) of the liquid. Set aside the star anise and cherries. 6. Discard the excess liquid.
  • Pour back the reserved liquid into the pan. Add the plum sauce and soy sauce, then simmer for 2 minutes until the sauce thickens. Take the pan off the heat and gently mix in the reserved cherries and star anise. Keep covered to maintain warmth.
  • In a spacious skillet, warm the oil over medium-high heat. Season the pork generously with salt and pepper. Sear for 2 minutes on each side until nicely browned. Place the pork on a baking tray, brush with 2 tablespoons of sauce, and bake for 10-15 minutes until fully cooked.
  • Serve the pork and Asian greens on individual plates and generously drizzle the remaining sauce over each serving.
