Russian Green Bean and Potato Soup

Satisfying Russian vegetable soup bursting with seasonal flavors. Delight in each spoonful!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 large onion, halved and thinly sliced
  • 4 red potatoes, cubed
  • 0.5 pound green beans, cut into 1 inch pieces
  • 5 cups vegetable, chicken, or beef broth
  • 2 tablespoons whole wheat flour
  • 0.5 cup sour cream
  • 0.75 cup sauerkraut with juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste
Instructions:
  • In a large saucepan over medium heat, sauté the onion in vegetable oil until softened and translucent, which should take about 5 minutes. Then, add the potatoes and green beans and continue cooking until the green beans have slightly softened, which should take an additional 5 minutes.
  • - Add the vegetable stock to the pot and bring it to a high boil. Reduce the heat to medium-low, cover, and cook until the potatoes are soft, around 15 minutes. Mix the flour into the sour cream gradually and pour it into the soup. Add the sauerkraut and dill, season with salt and pepper to taste. Simmer for an additional 5 minutes before serving.
