Garlic green beans with cumin-infused tomato sauce.
Ingredients:
  • 1 pound fresh green beans, trimmed
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 tablespoon chopped fresh parsley
  • 1 (14.5 ounce) can diced tomatoes including juice
  • 1 tablespoon white wine vinegar
  • 1 teaspoon ground cumin
  • 1 pinch white sugar, or to taste
  • 1 tablespoon olive oil
Instructions:
  • Boil lightly-salted water in a pot, add green beans, bring back to a boil. Simmer on medium heat until green beans are tender, about 8 minutes. Drain.
  • In a large skillet over medium heat, sauté onions, 1 clove of garlic, and parsley in 2 tablespoons of olive oil until the onions are translucent, around 5 minutes. Add tomatoes, wine vinegar, and cumin. Bring to a boil, then simmer on medium-low for 30 minutes until the sauce thickens. Transfer to a bowl.
  • Heat 1 tablespoon of olive oil in a clean skillet over medium-low heat. Sauté 1 clove of chopped garlic in the hot oil until fragrant and beginning to brown, for about 2 to 3 minutes. Add the cooked green beans back in and stir to coat with oil. Pour the sauce over the beans and mix well. Serve while hot.
