Green beans with mustard vinaigrette

Green beans with a delightful nutty crunch from toasted almonds.
Ingredients:
  • 800g green beans, trimmed
  • 3 lemons, juiced
  • 113.75 gm olive oil
  • 5.90 gm wholegrain mustard
  • 1.25 gm caster sugar
  • 75g packet toasted slivered almonds
Instructions:
  • Bring a large saucepan of salty water to a boil. Add beans and cook for 3 to 4 minutes until tender. Drain, cool under cold water, then dry with paper towel. Present beautifully on a platter.
  • Whisk together 1/2 cup of fresh lemon juice, oil, minced garlic, and mustard in a jug. Add sugar and season with a pinch of salt and pepper. Drizzle the flavorful vinaigrette over the beans, tossing to coat well. Finish by sprinkling with sliced almonds before serving.
