Spicy green beans with tomato-chile salsa - a vibrant Southwestern twist on a classic French dish.
Ingredients:
  • Fresh green beans - 1 1b, strings removed, stem end cut off, cut into even sized pieces, approximately 2" long
  • 1 tablespoon salt
  • 1 tablespoon extra virgin olive oil
  • Prepared salsa
Instructions:
  • Prepare the green beans: Place the green beans in a pot with enough water to cover them (about 2 quarts). Add 1 tablespoon of salt for every 2 quarts of water and bring to a boil. Boil uncovered for 5 minutes, then strain and set aside.
  • On high heat, warm olive oil in the pan. Add beans and 1/2 cup of salsa. Stir well and cook for 1 minute. Adjust seasoning with salt or extra salsa as desired.
