Ingredients:
  • 1 small knob of unsalted butter
  • ½ tablespoon olive oil
  • 160 g cooked sliced higher-welfare ham
  • 2 large free-range eggs
  • 2 small green chillies
  • a few sprigs of fresh mixed herbs, such as flat-leaf parsley, tarragon, basil, mint, dill, marjoram, chives
  • 6 tablespoons olive oil
  • 1 teaspoon cider vinegar
  • ½ a lime
Instructions:
  • Prepare the salsa by removing the seeds from the chili, finely chopping it, and placing it in a bowl. Finely chop the herbs and add them to the bowl. Mix in the oil, vinegar, and lime juice, then set aside. In a frying pan over medium heat, heat the butter and oil. Add the ham slices and crack the eggs over them. Fry for 3 to 4 minutes until the eggs are cooked to your preference. Lightly season before serving with the green chili and herb salsa drizzled on top.
