Green fried rice

Fragrant rice enhances any Asian feast.
Ingredients:
  • 400g (2 cups) white long-grain rice
  • 1 brown onion, halved, finely chopped
  • 2 garlic cloves, finely chopped
  • 6 green shallots, ends trimmed, finely chopped
  • 2 large fresh green chillies, finely chopped
  • 250.00 ml loosely packed fresh coriander leaves
  • 4.50 gm white sugar
  • Coriander leaves, extra, to garnish
Instructions:
  • Boil the rice in a large saucepan of salted water according to package instructions until tender. Drain and cool in a colander for 4 hours.
  • In a large wok over sizzling heat, sauté onions and garlic until onions are soft, about 3 minutes. Toss in shallots and chili, stir-fry until tender, about 1 minute.
  • Stir-fry rice for 6 minutes until heated through. Remove from heat and gently mix in fresh coriander. Season to taste with sugar, salt, and pepper.
  • Transfer to a stylish serving bowl and sprinkle with fresh coriander for a beautiful garnish.
