Flaky Chinese green onion pancakes with a unique kneading technique and butter drizzle.
Ingredients:
  • 3 cups all-purpose flour
  • 1 cup hot water
  • 0.5 cup cold water
  • 1 cup chopped scallions, or to taste
  • 0.25 cup butter, softened
  • 1.5 teaspoons vegetable oil, or as needed
Instructions:
  • In a bowl, mix flour with hot water gradually while stirring continuously. Pour in cold water and mix until the dough is moistened all over. Lightly knead the dough by hand until it forms a smooth ball. Place the dough in a sealed plastic bag greased with oil and let it rest for 30 minutes.
  • Combine scallions in a bowl; generously season with salt and pepper.
  • Roll out dough on a floured surface into a thin rectangle. Spread butter, sprinkle with salt and pepper evenly. Add scallions, leaving the top edge empty. Roll up dough tightly from the opposite edge, ensuring scallions stay in place.
  • Cut the roll into 3- to 4-inch-long pieces by hand, then seal and pinch both ends. Gently flatten each piece into a round pancake shape.
  • In a nonstick saucepan, heat oil and cook pancakes until golden brown on each side for about 3 minutes. Gently crush each pancake with the back of a spoon or ladle to achieve a flaky texture.
