Add this timeless soup to your collection for a beloved family favorite.
Ingredients:
  • 1 large brown onion, finely chopped
  • 312.50 ml dried green split peas, rinsed
  • 510.00 gm chicken style liquid stock
  • 42.00 gm lemon juice
  • 125g rashers shortcut bacon, rind removed
  • Smoked paprika, to serve
  • Bread rolls, to serve
Instructions:
  • Heat oil in a saucepan over medium-high heat. Sauté onions and garlic for 3 minutes until softened. Add peas, stir to coat, then pour in stock and 2 cups cold water.
  • Bring the mixture to a gentle boil, then reduce heat to a low simmer. Cook partially covered for 25 minutes or until peas are tender. Remove from heat, blend half the mixture until smooth, and return it to the pan. Stir in lemon juice and cook for an additional 3 minutes until heated through.
  • Heat a frying pan over medium-high heat. Cook the bacon until crisp, about 4 to 5 minutes, turning as needed. Transfer the cooked bacon to a plate lined with paper towel to drain and break into pieces. Ladle the soup into bowls, top with the bacon and paprika, and serve with rolls.
