Quick and flavorful recipe using canned beans and escarole for a satisfying side or meal.
Ingredients:
  • 1 teaspoon salt
  • 2 heads escarole, cut into 2-inch pieces
  • 0.25 cup olive oil
  • 3 cloves garlic, pressed
  • 1 teaspoon salt, or more to taste
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 tablespoon Parmesan cheese, or to taste
Instructions:
  • Fill a large pot with enough water to reach about 2 inches deep. Bring it to a boil and add 1 teaspoon of salt. Add escarole and cook at a boil, pushing it down as it wilts, until fork-tender, about 3 to 5 minutes. Drain the escarole before serving.
  • Drizzle olive oil in a pot over medium heat. Sauté garlic, 1 tsp salt, black pepper, and red pepper flakes in the oil until garlic is softened, for about 3 to 5 minutes. Add drained escarole and cannellini beans; cook until beans are heated through, for about 5 to 10 minutes. Just before serving, sprinkle Parmesan cheese over the dish.
