Grilled and roasted pork (Maiale alla griglia e arrosto)

Barbecue then bake for perfectly juicy roast pork - a must-have party dish!
Ingredients:
  • 2 heaped tablespoons fennel seeds
  • 2-3 dried red chillies
  • 2 kg higher-welfare pork loin
  • olive oil
  • sea salt
  • freshly ground black pepper
  • 10 tablespoons good-quality red wine vinegar
  • 1 bunch fresh rosemary leaves picked
Instructions:
  • Smash fennel seeds and dried chili in a pestle and mortar. Score fat of 2kg/4½lb loin of pork in a criss-cross pattern. Rub pork with olive oil, then sprinkle with fennel seeds and chili. Let it sit in a roasting tray to absorb flavors. Grill for 10-15 minutes, turning for charred marks. Roast in oven at 200ºC/400ºF/gas 6 for 20 minutes with vinegar and rosemary. Rest for 10 minutes before slicing. Serve with warm juices from tray. Enjoy!
