Spiced grilled eggplant with smoky flavors, fresh herbs, perfect for dipping with pita and veggies.
Ingredients:
  • 2 large eggplant
  • 3 tablespoons tahini
  • 3 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons salt
  • 0.75 teaspoon smoked paprika
  • 0.5 teaspoon cumin
  • 3 tablespoons chopped fresh parsley
  • 0.25 cup extra virgin olive oil
Instructions:
  • Preheat your outdoor grill to medium-high heat and lightly oil the grate. Use a fork to prick holes in the eggplant to allow steam to escape while cooking.
  • Grill the eggplant on high heat until the skins are charred, approximately 30 minutes, remember to turn them occasionally. Then, transfer them to a baking pan, cover, and allow them to steam for 10 minutes.
  • Gently remove the stem and skin using your hands, ensuring the skin is split open for easy peeling. Discard the skin, place the flesh in a colander, and let it drain for 20 minutes. Pat dry with paper towels to remove any excess moisture.
  • Combine eggplant, tahini, lemon juice, garlic, salt, smoked paprika, and cumin in a food processor. Blend until smooth. Then, add parsley and olive oil, and pulse until well combined.
