Grilled Walleye with Pecan Butter

Indulge in grilled walleye with crunchy pecans for a delectable seafood dinner.
Ingredients:
  • 1 teaspoon chopped fresh chives
  • 1 teaspoon orange juice
  • 1/4 cup chopped pecans, toasted
  • 2 (6-oz.) walleye fillets
  • Dash coarse ground black pepper
Instructions:
  • Preheat the grill. Prepare a 12-inch square piece of heavy-duty foil by cutting 2-inch slits every 2 inches across the foil. Spray the foil with nonstick cooking spray.
  • Mix butter, chives, orange juice, and 2 tablespoons of pecans in a small bowl until well combined.
  • Preheat the gas grill over medium heat or charcoal grill 4 to 6 inches from medium coals and place foil on the grill. Season walleye fillets with salt and pepper and lay them on the foil. Grill for 8 to 12 minutes until the fish flakes easily, turning once. In the last minute of cooking, add a dollop of pecan butter on top. Transfer the fillets to a serving platter and garnish with the remaining 2 tablespoons of pecans.
