Grilled Barbecue Chicken Kabobs

Tender chicken and colorful veggies on skewers, drizzled with zesty citrus sauce, ready in minutes.
Ingredients:
  • 1/2 cup barbecue sauce
  • 1/4 cup orange marmalade
  • 1 lb boneless skinless chicken breasts, cut into 3/4-inch pieces
  • 1/2 medium red onion, cut into 1-inch chunks
  • 1 medium red bell pepper, cut into 1-inch chunks
  • 2 tablespoons olive or vegetable oil
  • 1 teaspoon seasoned salt
Instructions:
  • Preheat grill. Combine barbecue sauce and marmalade in a small microwave-safe bowl. Reserve 1/4 cup of the sauce mixture in a separate dish.
  • Thread chicken pieces onto 4 skewers and onion and bell pepper chunks onto 4 separate skewers, ensuring a 1/4-inch space between each piece. Brush with oil and season with seasoned salt.
  • Grill the kabobs over medium heat, turning and brushing them with sauce mixture occasionally, until chicken is cooked through, about 10-15 minutes.
  • Microwave the leftover barbecue sauce mixture on High for 20 to 30 seconds until piping hot. Drizzle the sauce over the kabobs before serving.
