Grilled BBQ pork bites with creamy dipping sauce - perfect for any gathering! Can also be made under the broiler.
Ingredients:
  • 1 pork tenderloin (3/4 to 1 lb)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon packed brown sugar
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1/2 cup mayonnaise or salad dressing
  • 1 medium green onion, finely chopped (1 tablespoon)
Instructions:
  • Cube the pork into 32 (1-inch) pieces and place them in a medium bowl. In a small bowl, combine chili powder, cumin, brown sugar, garlic powder, and red pepper. Set aside 2 teaspoons of the spice mixture; then sprinkle the rest over the pork, stirring well to coat. Allow it to marinate for 15 minutes.
  • Combine mayonnaise, mustard, 2 teaspoons of the reserved spice mixture, and onion in a small bowl; set aside.
  • Preheat gas or charcoal grill and lightly coat a grill basket with cooking spray. Transfer the pork into the grill basket.
  • Place the basket on the grill over medium heat and cook for 10 to 12 minutes, shaking or stirring the pork occasionally, until it is no longer pink in the center. Serve with toothpicks and a tasty mayonnaise mixture for dipping.
