Delicious grilled basil chicken recipe by Curtis Stone is packed with flavor and can be enjoyed in many ways.
Ingredients:
  • 500g chicken breast, pounded slightly, from the deli
  • 2 cloves garlic, finely chopped
  • 72.80 gm olive oil
  • 250.00 ml fresh basil, leaves only
  • 5.30 gm lemon juice
  • 1/2 medium fennel, core removed, thinly sliced
  • 150g cherry tomatoes, halved
  • 100g rocket
  • 20g parmesan cheese, shaved with vegetable peeler
Instructions:
  • Preheat the barbecue on medium-high heat.
  • Combine chicken, garlic, 1 tablespoon of oil, salt, and pepper in a medium mixing bowl, ensuring the chicken is evenly coated.
  • Grill chicken over high heat until beautifully charred and perfectly cooked, about 4 minutes per side.
  • Transfer the dish to a plate and allow it to rest.
  • Create a flavorful dressing by blending basil and 3 tablespoons of oil in a food processor until a chunky pesto forms. Adjust the taste with lemon juice, salt, and pepper. Refrigerate until needed.
  • Once the chicken has cooled, use your hands to shred it into thin strips.
  • Combine fennel, tomatoes, and chicken in a medium mixing bowl with the fragrant basil pesto.
  • Combine rocket with 2 teaspoons of oil in a large mixing bowl, then season with salt and pepper to taste.
  • Evenly distribute rocket among 4 plates. Add a flavorful chicken basil mix on top and finish with a sprinkle of shaved parmesan for an elegant touch.
