Try this delicious basil chicken and pesto sandwich for a flavorful grilled meal!
Ingredients:
  • 4 boneless skinless chicken breast halves (about 1 1/4 pounds)
  • 3/4 cup basil pesto
  • 1/2 teaspoon salt
  • 1 bell pepper, cut into fourths
  • 8 slices French bread, 3/4 inch thick
  • 8 to 12 large fresh basil leaves
Instructions:
  • Place the chicken in a shallow glass or plastic dish. Brush half of the pesto over the chicken, turning to coat. Sprinkle with salt and brush with the remaining pesto. Cover and refrigerate for at least 1 hour but no longer than 24 hours.
  • Preheat your grill for direct heat. Grill the chicken uncovered for 15 to 20 minutes, turning once, until the juices run clear. Add the bell pepper for the last 10 minutes until it's crisp-tender. Toast the bread for the final 3 minutes, turning once until golden.
  • Slice the bell pepper into strips. Spread the remaining 1/2 cup of pesto on one side of each bread slice. Place the chicken on 4 of the bread slices, then top with the sliced bell pepper, basil, and the remaining bread slices.
