Grilled Pesto Chicken Packs

Deliciously tiny main dish bursting with flavor!
Ingredients:
  • 4 boneless skinless chicken breast halves (1 1/4 pounds)
  • 8 roma (plum) tomatoes, cut into 1/2 inch slices
  • 4 small zucchini, cut into 1/2-inch slices
  • 1/2 cup basil pesto
Instructions:
  • Prepare the grill for direct heat. Place 1 chicken breast half, 2 sliced tomatoes, and 1 sliced zucchini on one side of four 18x12-inch sheets of heavy-duty aluminum foil. Drizzle 2 tablespoons of pesto over the chicken and veggies on each sheet.
  • Wrap the foil tightly around the chicken and vegetables, leaving room for circulation and expansion. Make sure to seal the edges well with a 1/2-inch fold.
  • Grill the covered packets over medium heat for 20 to 25 minutes until the chicken juices run clear when the thickest part is cut. Place the packets on plates, then make a large X cut on the top and fold back the foil.
