Grilled buffalo chicken thighs with a twist - paired with zesty blue cheese slaw for a satisfying meal.
Ingredients:
  • 3 stalks celery, cut into matchstick-size pieces
  • 2 large carrots, shredded
  • 0.33333334326744 cup buttermilk
  • 0.33333334326744 cup crumbled blue cheese
  • 2 teaspoons red wine vinegar
  • 1 teaspoon Worcestershire sauce
  • 0.5 teaspoon celery seed
  • 0.5 teaspoon salt
  • 3 pounds boneless skinless chicken thighs
  • 1 cup buffalo wing sauce, divided
Instructions:
  • In a bowl, mix together celery, carrots, buttermilk, blue cheese, vinegar, Worcestershire sauce, celery seed, and salt. Let sit for a bit.
  • Coat chicken thighs with 3/4 cup wing sauce in a bowl.
  • Preheat your grill to medium-high heat and give the grate a light oiling.
  • Grill the chicken on the preheated grill for a total of 12 minutes, flipping halfway through. Brush thighs with the remaining 1/4 cup wing sauce and continue grilling until cooked through, about 2 minutes. Check for doneness with an instant-read thermometer - it should read 165°F (74°C) near the bone.
  • Plate the chicken and serve it alongside a side of flavorful blue cheese slaw.
