Protein-packed salad with grilled chicken, crispy bacon, and creamy ranch dressing - a quick and easy lunch option any day of the week.
Ingredients:
  • 4 heads baby artisan lettuce
  • 1 pound grilled chicken breast, sliced
  • 10 ounces multi-colored cherry tomatoes, halved, or more to taste
  • 1 cup thinly sliced mini peppers
  • 0.5 pound cooked bacon, chopped
  • 0.5 cup ranch dressing
  • 2 medium avocados - peeled, pitted, and cubed
  • 0.5 cup multicolored tortilla strips
  • pollo asado seasoning
Instructions:
  • Prepare the mini artisan lettuces by removing the core. Cut each lettuce head into bite-sized pieces with a sharp knife on a large cutting board, then transfer to a very large bowl.
  • Combine chicken, tomatoes, peppers, and bacon with salad greens. Drizzle with ranch dressing and toss to coat.
  • Generously scatter cubed avocado and crunchy tortilla strips over the vibrant salad, then enhance with pollo asado seasoning for an extra burst of flavor, if you wish.
