Zesty citrus dressing with chili powder and cumin for marinated chicken and salad.
Ingredients:
  • 0.5 cup orange juice
  • 0.25 cup lime juice
  • 2 shallots, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon white sugar
  • 4 (4 ounce) skinless, boneless chicken breast halves
  • 8 cups torn romaine lettuce
  • 2 oranges - peeled, segmented, and chopped
  • 2 stalks celery, sliced
  • 4 green onions, chopped
Instructions:
  • Whisk together fresh orange juice, tangy lime juice, aromatic shallots, zesty garlic, spicy chili powder, earthy cumin, and a hint of sugar in a mixing bowl. Transfer half of this flavorful mixture into a large resealable plastic bag, then gently place the chicken breasts inside. Seal the bag and let it marinate in the refrigerator for a minimum of 2 hours. Save the rest of the dressing in the refrigerator for later use.
  • Heat up the outdoor grill until it reaches medium-high. Combine romaine lettuce, oranges, celery, and green onions in a large salad bowl. Set aside.
  • Oil the grate and grill the chicken, discarding the marinade. Grill each side for 6 to 8 minutes until juices run clear. Slice chicken into thin strips after grilling.
  • Coat salad in reserved dressing and layer with sliced chicken.
