Grilled Chicken Florentine

Effortless skillet dinner that tastes gourmet, ready in 30 minutes with just a 5-minute prep time.
Ingredients:
  • 1 teaspoon olive oil
  • 4 boneless skinless chicken breasts (about 4 oz each)
  • 1 can (20 oz) crushed tomatoes
  • 6 oz fresh spinach leaves (about 4 cups)
  • 1 1/2 teaspoons dried oregano leaves
  • Salt to taste
  • Pepper to taste
  • 1/4 cup mozzarella cheese (1 oz)
  • 3 tablespoons fresh basil leaves, coarsely chopped
Instructions:
  • Coat chicken breasts with olive oil, then preheat grill for direct heat using either coals or gas.
  • Grill the chicken on medium heat, covered, for 4 minutes, turning once, until both sides have beautiful grill marks.
  • Place the partially cooked chicken in a large skillet, then add tomatoes, spinach, and oregano leaves. Cover and simmer over low heat for 10 to 12 minutes, or until the chicken is no longer pink in the center and the spinach is wilted.
  • Season with salt and pepper to your liking. Arrange chicken breasts on a serving platter and spoon tomato mixture with spinach on top of the chicken. Sprinkle with cheese for a melty finish from the residual heat. Finish off with fresh basil for a lovely garnish.
