Quick, healthy, affordable chicken dish that's tastier than takeout.
Ingredients:
  • 4 chicken breast fillets
  • 2 medium zucchini, peeled into ribbons
  • 27.30 gm extra virgin olive oil
  • 2 garlic cloves, chopped
  • 125.00 ml fresh coriander leaves
  • 165.00 ml fresh flat-leaf parsley leaves
  • 2.50 gm ground cumin
  • 99.00 gm hulled tahini
  • 86.63 gm lemon juice
  • 100g mixed salad leaves
  • 1 avocado, thickly sliced
  • 200g tomato medley, sliced
  • 4 slices crusty sourdough bread, to serve
Instructions:
  • Cut each chicken breast in half horizontally to create thin fillets. Drizzle both zucchini and chicken with oil and place them on a hot chargrill pan. Grill the zucchini for 1 minute per side until charred, followed by the chicken for 3 to 4 minutes per side until browned and fully cooked.
  • In a food processor, blend garlic, coriander, parsley, cumin, tahini, lemon juice, and 1/4 cup water until smooth. Season with salt and pepper to taste.
  • Toss together salad leaves, avocado, zucchini, and tomato in a bowl. Plate chicken alongside the salad, green tahini, and bread.
