Grilled Chipotle-Honey Pork

Grilled tenderloins with zesty lime sauce; a delicious main dish for six.
Ingredients:
  • 1/3 cup honey
  • 1/3 cup fresh lime juice
  • 2 chipotle chiles in adobo sauce (from 7-oz can), drained, finely chopped
  • 1 teaspoon adobo sauce (from can of chipotle chiles)
  • 2 pork tenderloins (3/4 lb each)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Cooking spray
Instructions:
  • Preheat the grill while combining honey, lime juice, chiles, and adobo sauce in a small saucepan.
  • Once the grill is hot, season pork tenderloins with salt and pepper, then lightly coat them with cooking spray. Place the pork on the preheated grill over medium heat, cover, and cook for 15 to 20 minutes. Remember to flip the pork occasionally and baste with a honey mixture during the last 10 minutes of cooking. The pork is done when it has a slight pink center and the thermometer reads 160°F.
  • Bring the leftover honey mixture to a rolling boil, and let it boil for 1 minute. Slice the pork and serve it with the honey mixture.
