Grilled corn on the cob with cilantro lime butter.
Ingredients:
  • 1 cup butter
  • 0.25 cup chopped fresh cilantro
  • 1.5 tablespoons fresh lime juice
  • 1 pinch cayenne pepper
  • 8 ears corn on the cob, unhusked
  • 3 quarts cold water, or as needed to cover
Instructions:
  • In a bowl, blend butter until smooth, then incorporate cilantro, lime juice, and cayenne pepper until fully mixed. Chill, covered, for 1 hour to enhance flavors.
  • Peel back husks from the corn, starting at the top, keeping them attached at the bottom. Remove silk and close husks over the ears. Soak corn in cold water in a large bowl for about 20 minutes, ensuring husks are completely wet.
  • Prepare the grill by preheating it to medium heat and brushing the grate lightly with oil.
  • Grill the corn in husks on a hot grate until charred and kernels are tender, about 20 to 25 minutes, turning occasionally. Remove husks and serve with cilantro lime butter.
