Grilled Flank Steak Salad with Parmesan Crisps

Elevate any barbecue with this crowd-pleasing dish.
Ingredients:
  • 1 lb beef flank steak
  • 1/2 cup balsamic vinaigrette dressing or Italian dressing
  • 1/4 teaspoon cracked black pepper
  • 1 lb fresh asparagus spears, trimmed
  • 1/8 teaspoon pepper
  • 6 cups torn romaine lettuce
  • 1/2 cup thinly sliced radishes
  • Additional 1/4 cup dressing
  • 6 tablespoons finely shredded Parmesan cheese
Instructions:
  • Place the steak and 1/2 cup dressing in a large nonmetal dish or resealable food-storage plastic bag. Make sure the steak is coated with the dressing. Cover the dish or seal the bag, then refrigerate for at least 2 hours or overnight to marinate.
  • Preheat oven to 350°F and lightly coat a large cookie sheet with cooking spray.
  • For Parmesan Crisps, place heaping teaspoonfuls of Parmesan cheese onto a baking sheet, then shape each into a 2-inch circle. Bake for 6 to 8 minutes until golden brown. Transfer to a cooling rack. These can be prepared up to 2 days in advance and stored between wax paper layers in an airtight container at room temperature.
  • Preheat your grill. Take the steak out of the marinade, saving the extra marinade. Season the steak with cracked black pepper. Grill the steak over medium heat, covering it, for 15 to 18 minutes or until cooked to your liking, flipping it once. Allow the steak to rest for 5 minutes.
  • Coat asparagus in the flavorful marinade. Grill the asparagus until tender, about 6 to 8 minutes, turning occasionally. Season with salt and pepper before serving.
  • Combine fresh, crisp lettuce and vibrant radishes with a generous drizzle of 1/4 cup of dressing in a large bowl. Portion the lettuce mix onto 4 dinner plates. Slice the tender steak thinly against the grain, and distribute it along with the asparagus evenly among the plates. Accompany with Crisps for a delightful meal.
