Grilled hanger steak: Flavorful meat, skip the spice rub if desired.
Ingredients:
  • 2 pounds hanger steaks
  • 2 teaspoons Worcestershire sauce
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon freshly ground black pepper, or to taste
  • 1 tablespoon olive oil
  • 0.5 teaspoon sea salt, or to taste
Instructions:
  • Prepare the hanger steak by trimming off fat and membrane 2 hours before cooking. If the steak is whole, separate the meat from the sinew to create 2 thin steak pieces. Place the trimmed steaks in a non-reactive baking dish.
  • Mix Worcestershire sauce, garlic powder, onion powder, and ground black pepper in a small bowl to create a flavorful spice blend. Massage the spice mix onto every part of the steak for maximum flavor infusion.
  • Wrap the steak in aluminum foil and let it rest at room temperature for approximately 2 hours.
  • Heat up a grill outdoors until it reaches medium-high heat, then lightly oil the grate before cooking.
  • Massage the steaks with premium olive oil and gently season with sea salt.
  • Once the grill grates are hot, place the oiled steak on the grate. Cook each side for 2 to 3 minutes until the steak is firm and has a reddish-pink, juicy center for medium-rare. Use an instant-read thermometer to check the internal temperature, which should reach 130°F (54°C). Take the steak off the grill and cover loosely with foil to let it reach a final temperature of 135°F (57°C) from residual heat.
  • Slice the steaks into 1/4 inch thick pieces and serve them warm.
