Elevate chicken with a unique blend of curry, coconut, and peanut butter for a global twist.
Ingredients:
  • 1/2 cup orange juice
  • 1/4 cup peanut butter
  • 2 teaspoons curry powder
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 medium red bell pepper, cut in half
  • 1/4 cup shredded coconut
  • 1/4 cup currants
  • Hot cooked rice, if desired
Instructions:
  • In a medium nonmetal bowl, whisk together the vibrant orange juice, rich peanut butter, and aromatic curry powder until smooth. Add the chicken and coat it thoroughly in the marinade. Cover the bowl and refrigerate for at least 1 hour, making sure to turn the chicken once. Ensure not to exceed a marinating time of 24 hours.
  • Preheat gas or charcoal grill. Take chicken out of the marinade and discard the marinade. Grill chicken and bell pepper over medium heat, turning once, until chicken reaches an internal temperature of 170°F and the juice runs clear, about 15 to 20 minutes.
  • Slice the chicken breasts diagonally into 1/2-inch slices and the bell pepper into 1/2-inch strips. Sprinkle with coconut and currants, then serve with rice.
