Grilled Lemon Dill Salmon

Grilled lemon dill salmon - a quick, low carb, and paleo-friendly weekday meal.
Ingredients:
  • 4 (6-ounce) salmon filets or steaks, preferably skin-on
  • Kosher salt
  • 2 tablespoons extra virgin olive oil, plus more to wipe down the grill
  • 1/4 cup unsalted butter, room temperature
  • 2 teaspoons chopped fresh dill
  • One thinly sliced lemon, for garnish
Instructions:
  • Take the salmon out of the fridge and lightly salt it. Allow it to come to room temperature as you preheat the grill on high for direct heat.
  • Prepare the dill butter by combining fresh dill and butter in a small bowl as the grill heats up.
  • Preheat the grill and clean the grates. Brush salmon with 2 tablespoons of oil and place skin side up on the grill. Grill over high heat for 2 to 4 minutes. Flip, adjust heat if needed, and continue grilling for 3 to 5 minutes until cooked to your liking.
  • Serve: Place a few thin slices of lemon on each plate. Remove the salmon from the grill, letting the skin stick to the grates. Place the salmon on the lemon slices, top each piece with a tablespoon of dill butter, and serve immediately.
