Grilled peaches with brown sugar and cinnamon - a simple and delicious summer dessert. Perfect with vanilla ice cream.
Ingredients:
  • 2 tablespoons light brown sugar, tightly packed
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 4 ripe yellow peaches or nectarines, cut in half and pit removed
  • 2 tablespoons unsalted butter, melted
  • 8 scoops vanilla ice cream, for serving
Instructions:
  • Preheat the grill to a sizzling 400°F, then give those grill grates a quick clean and oil them up.
  • Prepare the irresistible brown sugar topping by whisking together brown sugar, granulated sugar, cinnamon, and salt in a small bowl. Keep it aside for later.
  • Grilling the peaches: Brush cut side of peaches with melted butter and place on hot grill, cut side-down. Grill for 2 to 3 minutes until clear grill marks form, then flip and cook cut side-up for 2 minutes uncovered.
  • To plate, lay a grilled peach half on a plate and sprinkle with 1/2 tablespoon brown sugar mixture while warm. Add a scoop of vanilla ice cream and serve immediately. Store any leftovers in the fridge in an airtight container for up to 3 days. Reheat at 350°F for 10 minutes in the oven or 1 minute in the microwave. Enjoy warm or cold!
