Grilled Peaches with Blue Cheese and Balsamic

Grilled peaches: simple, elegant summer dessert combining sweet and salty flavors. Ideal for hosting!
Ingredients:
  • 0.75 cup balsamic vinegar
  • 3 tablespoons white sugar
  • 2 teaspoons freshly ground black peppercorns
  • 2 large fresh peaches with peel, halved and pitted
  • 2.5 ounces blue cheese, crumbled
Instructions:
  • Get the grill nice and hot on medium-high heat, then give the grate a light coating of oil.
  • Combine vinegar, sugar, and pepper in a saucepan over medium heat and stir until slightly thickened and reduced by half. Set aside the glaze once removed from heat.
  • Grill peaches cut-side down until caramelized, about 5 minutes. Flip them over, brush with balsamic glaze, and grill for an additional 2 to 3 minutes.
  • Place the peach halves in individual serving dishes and generously drizzle with the remaining glaze. Finish by sprinkling with tangy blue cheese.
