Chef Lauren Keating presents a simple yet delicious grilled dessert recipe.
Ingredients:
  • 1/4 cup part-skim ricotta cheese
  • 1 1/2 teaspoons honey
  • 1/4 teaspoon vanilla
  • 4 peaches, halved, pits removed
  • Cooking spray
  • 1/4 cup crushed Dulce de Leche Cheerios™ cereal
Instructions:
  • Preheat gas or charcoal grill for indirect cooking according to manufacturer's instructions. For a two-burner gas grill, set one burner to high heat.
  • Combine ricotta, honey, and vanilla in a small bowl. Chill in the refrigerator until serving.
  • Coat peach halves with cooking spray and grill them cut side down until grill marks appear, about 2 to 3 minutes.
  • Transfer the peaches to the cooler side of a gas grill or position them over a drip pan on a charcoal grill. Grill until tender, approximately 5 minutes. Take the peaches off the grill and arrange them on individual plates or a large serving platter.
  • Fill each peach half generously with 1 tablespoon of the delicious cheese mixture, then sprinkle the top with a layer of crunchy cereal crumbs.
