Umami-packed grilled chicken with soy, peanut butter, and zesty lime.
Ingredients:
  • 2 tablespoons reduced fat peanut butter
  • 1 tablespoon fresh lime juice
  • 2 teaspoons soy sauce
  • 1 clove garlic, chopped
  • 0.33333334326744 teaspoon curry powder
  • 1 pinch ground cayenne pepper
  • 4 skinless, boneless chicken breast halves
Instructions:
  • Prepare the outdoor grill by preheating to medium heat and lightly oiling the grate.
  • Combine the peanut butter, lime juice, soy sauce, garlic, curry powder, and cayenne pepper in a bowl and mix well.
  • Grill the chicken, brushing half of the sauce on top, for 6 to 8 minutes. Flip the chicken, brush on the rest of the sauce, and cook for another 6 to 8 minutes until fully cooked. Ensure it reaches an internal temperature of at least 165 degrees F (74 degrees C) with an instant-read thermometer.
