Thai-inspired chicken kabobs with savory peanut sauce.
Ingredients:
  • Cooking spray
  • 1/2 cup creamy peanut butter
  • 1/2 cup reduced-sodium soy sauce
  • 1/4 cup rice vinegar
  • 1/3 cup sugar
  • 1/4 teaspoon red pepper sauce
  • 6 boneless skinless chicken breasts (2 lb), each cut lengthwise into 4 strips
  • 1 large red bell pepper, cut into 24 pieces
Instructions:
  • Preheat your gas or charcoal grill. In a 2-quart saucepan, combine peanut butter, soy sauce, and vinegar until smooth. Add sugar and pepper sauce. Cook over medium-high heat for about 2 minutes, stirring constantly, until thickened. Transfer 3/4 cup of the sauce to a small serving bowl for dipping.
  • Skewer 4 chicken strips and 4 bell pepper pieces alternately onto 6 (12-inch) metal skewers, ensuring a 1/4-inch space between each piece. Brush the chicken and bell pepper with a bit of the remaining sauce for extra flavor.
  • Ensure juicy and flavorful kabobs by spraying them with cooking spray to prevent sticking. Grill kabobs over medium heat, covering the grill for 5 minutes. Flip kabobs, brush with sauce, and continue cooking for 2 to 3 minutes until chicken is cooked through. Serve with reserved sauce for dipping, discarding any leftover sauce used for brushing while grilling.
