Grilled pear and haloumi salad

Grilled pears and salty haloumi create a delicious and elegant side dish.
Ingredients:
  • 3 large William Bartlett pears, sliced lengthways
  • 180g haloumi, cut into 1cm-thick slices, halved diagonally
  • 42.00 gm lime juice
  • 13.60 gm maple syrup
  • 36.40 gm extra virgin olive oil
  • 1 red onion, cut into thin wedges
  • 250g punnet cherry truss tomatoes, halved
  • 150g baby spinach leaves
  • 40g pecan
  • Crusty bread, to serve
Instructions:
  • Spritz the pear and haloumi with canola oil spray, then grill them on high heat until each side is charred, about 1-2 minutes per side.
  • In a large bowl, mix together lime juice, maple syrup, and oil. Season with salt and pepper to taste.
  • Combine pear, haloumi, onion, tomato, spinach, and pecans in the dressing. Toss until well combined. Divide into serving bowls and enjoy with crusty bread.
