Grilled pineapple mango salsa with a kick of jalapeño and lime, perfect for a taste of summer freshness!
Ingredients:
  • 3 slices fresh pineapple
  • 1 red bell pepper
  • 1 jalapeno pepper
  • 2 large mangos - peeled, seeded, and diced
  • 1 small red onion, diced
  • 0.25 cup chopped cilantro
  • 1 lime, juiced
  • 0.5 teaspoon lime zest
Instructions:
  • Prepare the outdoor grill by preheating it to medium-high heat and lightly oiling the grate.
  • Grill pineapple, red bell pepper, and jalapeño pepper until pineapple has mild grill marks and peppers are evenly browned, about 3 minutes for pineapple and 5 to 7 minutes for peppers. Transfer the peppers to a paper bag to cool after grilling.
  • Once the peppers have cooled, delicately remove the skins using paper towels, then halve them and discard the seeds. Dice the cooled pineapple and peppers into small pieces and place them in a bowl. Mix in mango, red onion, cilantro, lime juice, and lime zest until well combined. Cover the bowl with plastic wrap and refrigerate for 8 hours to 1 day before serving.
