Grilled Pineapple Upside Down Cake

Delicious mini pineapple upside-down cakes for your BBQ dessert.
Ingredients:
  • 1.5 tablespoons brown sugar
  • 1 pineapple ring
  • 1 maraschino cherry
  • 1 shortcake shell
Instructions:
  • Preheat the outdoor grill until it reaches medium-high heat.
  • Lay out a 12x12-inch sheet of aluminum foil. Spoon brown sugar and butter in the middle. Arrange pineapple ring on top of the sugar and place the cherry in the center. Place the inverted shortcake shell on top of the pineapple ring. Fold the foil around the cake to create a packet.
  • Place the packet on the grill with the sugar-side facing down and cook until the sugar caramelizes and the cake is hot, approximately 12 minutes in a preheated grill.
