Grill up delightful pork and pineapple kabobs for a fun and flavorful dinner that will please the whole family!
Ingredients:
  • 1 pound pork tenderloin, trimmed and cut into 1-inch pieces
  • 0.5 cup reduced-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon lime juice
  • 1 teaspoon Sriracha sauce
  • 1 teaspoon ground ginger
  • 1 teaspoon minced garlic
  • 10 bamboo skewers
  • 2 teaspoons vegetable oil, or as needed
  • 3 cups cubed fresh pineapple
  • 2 red bell peppers, cut into cubes
  • 3 green onions, thinly sliced
  • 1 teaspoon sesame seeds
Instructions:
  • Place pork, soy sauce, rice vinegar, brown sugar, sesame oil, lime juice, Sriracha, ginger, and garlic in a large resealable bag. Seal the bag and shake well to evenly coat the pork. Refrigerate for 1 hour, flipping the bag occasionally.
  • Before grilling the pork, let the skewers soak in water for approximately 20 minutes to prevent them from burning on the grill.
  • Heat up your grill or grill pan to medium-high and lightly coat the grates with a touch of vegetable oil.
  • Skewer the flavorful marinated pork, sweet pineapple, and vibrant red pepper in a delightful alternating pattern; let go of the marinade.
  • Grill skewers until they develop grill marks and pork is cooked through, about 2 minutes per side. Top with green onions and sesame seeds before serving.
