Enjoy a refreshing berry salad perfect for summer.
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 cup raspberry chipotle sauce
  • 1 bag (10 oz) ready-to-eat mixed salad greens (such as romaine, iceberg and leaf lettuces)
  • 1 pint (2 cups) fresh raspberries
  • 1/4 cup butter toffee glazed-flavored sliced almonds (from 3.75-oz package)
  • 2 tablespoons olive or vegetable oil
  • 3 tablespoons orange juice
Instructions:
  • Preheat a gas or charcoal grill. Coat the chicken on both sides with a generous 1/4 cup of the delicious raspberry chipotle sauce.
  • Grill the chicken over medium heat, covered, for 10 to 15 minutes. Turn the chicken, brush with 1/4 cup of raspberry chipotle sauce, and continue grilling covered for 3 to 5 minutes until the chicken reaches an internal temperature of 170°F.
  • On 4 serving plates, elegantly place salad greens and fresh raspberries. Then, slice each chicken breast and artfully arrange over the greens. Finish by sprinkling with almonds for a delightful touch.
  • In a small bowl, whisk together the 1/2 cup of raspberry chipotle sauce, oil, and orange juice until blended. Drizzle over salads.
